Meeting 1: January 16 | 6:30 - 8:30p
This challenge kick-off meeting will feature a program introduction, discussion on beans and tips on how to stretch your meals. We are excited to host Rip Esselstyn, author of The Engine 2 Diet, at the Kick-Off with an inspiring talk to start your challenge right!
Meeting 2: January 23 | 6:30 - 8p
Week 2 focuses on the Plant Strong pillar. Marja will explain how to reconfigure your plate by eating more greens. She will also demonstrate knife skills, cooking methods, and will create and sample Health Starts Here recipes.
Meeting 3: January 30 | 6:30 - 8p
Week 3 focuses on the Healthy Fats pillar. Marja will discuss healthy fats and good sources for these fats, and she'll teach you how to cook without oils. We'll also conduct a store tour to show you how to eat healthy on a budget.
Meeting 4: February 6 | 6:30 - 8p
Week 4 focuses on the Nutrient Dense pillar. What is Nutrient Density and what foods rank high in nutrients? Marja will discuss this pillar and cook up several recipes to sample.
Meeting 5: February 13 | 6:30 - 8p
In this final meeting we will review the challenge and celebrate our successes. We'll host a recipe exchange and a fun scavenger hunt around the store.
Graduation: February 16 | 1 - 2:30p
